La Isla Red Honey ETH47

$16.00

Josh’s notes:
On bag open, the smell of peach skin. On wet, sweet red honeysuckle flowers rise with the vapor. In the cup, the gentle aroma of jasmine mixed with the sweet florality of honeysuckle meets the juice of an orange peach, with the bright edge of clementine acid, with a nice lingering finish of a crisp under ripe melon. Incredibly clean, tea-like mouthfeel. Exceptional coffee.

Apollon’s Gold’s notes:
“An Exclusive Partnership
Cultivated at the renowned La Isla farm, owned by Cafe Ar Bar and the Alietta family, we are incredibly proud to have been the exclusive buyers of their exceptional ETH47 lot since 2021.

A Return to Classic Complexity
While last year’s harvest showcased lush, ripe flavor profiles akin to a natural process, this season marks a stunning and elegant shift. The cup is highly reminiscent of a classic Ethiopian profile, distinguished by an unprecedentedly complex aftertaste.

This intricate flavor structure beautifully echoes our very first encounter with this lot back in 2021. To best honor and unlock this specific complexity, our final roasting approach was carefully calibrated to closely mirror the specialized profiles we utilized during the 2022 and 2023 seasons.

The Cup Profile
In the cup, expect a vibrant, mouthwatering burst of juicy peach beautifully intertwined with elegant honeysuckle florals. The experience gracefully concludes with a deeply complex and refreshing aftertaste layered with sweet clementine and crisp melon.”

Roast:
Roasted light and spectacularly by our friends at Apollon’s Gold in Tokyo, Japan, rested for 14 days, then vacuum packed and frozen. I recommend letting this coffee rest an additional 30(ish) days at room temperature after you receive it.
